Moose kofta kebabs

Fire up the grill and give these tasty moose kebabs a try. Loaded with traditional Middle Eastern spices, these are great as an appetizer or in a pita wrap as a tasty handheld snack. Don’t forget to remove the skewer!

Ingredients:

Makes 6 kebabs

  • 6 six-inch bamboo skewers
  • 1 lb ground moose meat
  • ½ white onion, finely chopped)
  • ½ tbsp garlic, minced
  • ¼ cup panko breadcrumbs
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp garam masala
  • ½ tbsp smoked paprika
  • ½ tbsp salt
  • 2 tsp ground black pepper
  • 2 tsp chili powder for some heat (optional)

Mint and lemon dressing

  • 1 cup sour cream
  • ½ tsp garlic powder
  • 1 tbsp fresh mint, chopped
  • 1 tbsp lemon juice
  • ½ tsp ground cumin
  • Salt and pepper to taste

Directions

1. Preheat grill to medium high. Soak bamboo skewers in water for an hour before grilling.

2. Combine all kofta ingredients.

3. Form mixture onto the skewers in a tube shape, using the palm of your hand. Be sure it is firmly on the skewer, so it doesn’t slip off during cooking.

4. Grill for five minutes on each side or until the internal temperature reaches 150˚F.

5. For dressing, mix all ingredients in a bowl.

6. Drizzle dressing over kebabs and serve.
